We are seeking an exceptional Chef de Cuisine / Executive Chef for Cip's by Cipriani and Pimms restaurants to function as the tactical business leader of the property’s culinary operation, by directing staff efforts toward exceptional and complete guest satisfaction, employee productivity, compliance to brand standards, and hotel profitability including a concentrated focus on Forbes Travel Guide 5-Star Service and Leading Quality Assurance Standards (+90 points), by ensuring quality, attention to detail and driving Perfection and Product Presentation throughout the resort. Reporting to the Executive Chef, this role is paramount in helping the property achieve the expectations of the brand’s target customer.


    Must have the expertise and ability to exceed Leading Quality Assurance (LQA) standards (+90 Points) and Forbes Travel Guide Five Star standards by ensuring quality, attention to detail, and driving of Belmond brand standards throughout the operation. The coming year will have tremendous focus placed on Forbes, LQA, and Belmond brand standards; a candidate with a proven track record of leading a team (combined with their subject matter expertise) through the process of acquiring and maintaining a Forbes Five Star rating is essential.

    • The candidate for this positions needs to have worked in Italy or under an Italian head chef.
    • Must have a strong knowledge and understanding of Italian flavors and spices.
    • Produce high quality products for the brand.
    • Possess exceptional food cost control abilities while producing a high level product.
    • Produce high quality culinary menu products that target the Resort’s luxury market.
    • Must have exceptional experience in banquets and catering.
    • Must have exceptional creative abilities in food presentation.
    • Must have strong training abilities.
    • Must be able to work all stations in all the Resort’s kitchens.
    • Ability to manage all kitchens and monitor food preparation, delivery and presentation.
    • Ensure that kitchen staff adheres strictly to the recipe and food preparation standards laid out by the Executive Chef.

    Education amp; Experience

    • Must have a 4 (four) year culinary degree.
    • Must have worked in Italy or under an Italian head chef.
    • Must have a minimum of 3 years’ previous experience as in a similar position for a premier luxury hotel.


    • Must have a strong knowledge and understanding of Italian flavors and spices.
    • Must have exceptionally high sanitation standards
    • Must have Food Handlers Certification/Health Card.
    • Must have thorough product knowledge of all food and beverage operations.
    • Must possess excellent communication skills both verbal and written.
    • Ability to manage and control other members of the culinary team.
    • Ability to direct and plan food preparation.
    • Readiness to discipline any under-performing kitchen staff.
    • Ability to assist kitchen staff when need arises.
    • Experience in schedule creation to ensure kitchen receives adequate manning.
    • Ability to provide consistent food quality.

    Title of identified candidate will be dependent on prior work experience.
