We are seeking an exceptional Sous Chef, Peruvian Cuisine for our signature restaurant, Maundays Club. Reporting to the Chef de Cuisine for Maundays Club, this position oversees the implementation of departmental strategies and ensures implementation of the brand service strategy and brand initiatives. The position supervises the culinary operation of Maundays Club and ensures that the resort meets the brand’s target customer needs, ensures employee satisfaction, and focuses on growing revenues and maximizing the financial performance of the department.

  • The candidate for this position needs to have worked in Peru or under the direction and mentorship of a Peruvian head chef.
  • Must have a strong knowledge and understanding of Peruvian flavors and spices.
  • Possess exceptional food cost control abilities while producing a high level product.
  • Produce high quality culinary menu products that target the Resort’s luxury market.
  • Must have exceptional creative abilities in food presentation and be able to produce high quality products for the brand.
  • Must have strong training abilities.
  • Must be able to work all stations in all the Resort’s kitchens.
  • Ability to manage all kitchens and monitor food preparation, delivery and presentation.
  • Ensure that kitchen staff adheres strictly to the recipe and food preparation standards laid out by the Chef de Cuisine.

Requirements

This position requires a minimum of a five (5) years of work experience either in Peru in a comparable luxury restaurant setting, or under the direction of a Peruvian chef. Must have the expertise and ability to exceed Leading Quality Assurance (LQA) standards (+90 Points) and Forbes Travel Guide Five Star standards by ensuring quality, attention to detail, and driving of Belmond brand standards throughout the operation. The coming year will have tremendous focus placed on Forbes, LQA, and Belmond brand standards; a candidate with a proven track record of leading a team (combined with their subject matter expertise) through the process of acquiring and maintaining a Forbes Five Star rating is essential.
