Job Description

From the pristine sands of our famed platinum beach to the inviting, cool interiors of our rooms and restaurants, every part of this luxury Anguilla resort is designed to enchant. We are inviting applications from suitably qualified people to fill the position of Sous Chef, Pimms Restaurant, at Cap Juluca, A Belmond Hotel, Anguilla. Pimms is one of the most romantic restaurants on the island. A menu of elevated Anguillian Cuisine, Caribbean classics and International Specialties.

Some of the job functions of the successful candidate include:

Assist with the training of staff for them to direct their efforts toward exceptional and complete guest satisfaction, employee productivity, compliance to brand standards, and hotel profitability.

Exceed Leading Quality Assurance (LQA) standards (+90 Points) and Forbes Travel Guide Five Star standards by ensuring quality, attention to detail, and driving of Belmond brand standards throughout the operation.

Ensure that food stock levels within the kitchen and pantry areas are of sufficient quantity and quality in relevance to the hotel’s occupancy and function forecasts.

Ensure that all food products received into the kitchen are of the required standard and quality and that they are stored and rotated correctly.

Assist in conducting development and performance reviews, identifying key personnel for further development and structured career pathing.

Comply with and enforce sanitation regulations and safety standards.

Requirements

Minimum of 3 years’ experience in the culinary, food and beverage, or related professional area as a Sous Chef for a premier luxury hotel or resort with a high-volume food production.

Hight school diploma or a 2- year degree from an accedited university in Culinary Arts, Hotel and Restaurant Management, or a related major.

Thorough product knowledge of all culinary operations.

Understanding of various cooking methods, ingredients, equipment, and procedures.

Detail oriented yet able to excel while multi-tasking.

Excellent communication and interpersonal skills.
