Job Description

From the pristine sands of our famed platinum beach to the inviting, cool interiors of our rooms and restaurants, every part of this luxury Anguilla resort is designed to enchant. We are inviting applications from suitably qualified people to fill the position of Sous Chef, UCHU Restaurant, at Cap Juluca, A Belmond Hotel, Anguilla.

The Sous Chef for UCHU Restaurant at Cap Juluca, A Belmond Hotel, Anguilla, will be responsible for the daily management and food production for UCHU Kitchen, ensuring maximum quality and profitability while working closely with the Chef de Cuisine, Peruvian Cuisine, to plan the production and development of seasonal and signature Peruvian offerings to include a concentrated focus on Forbes Travel Guide Service and Leading Quality Assurance Standards.

Exceed Leading Quality Assurance (LQA) standards (+90 Points) and Forbes Travel Guide Five Star standards by ensuring quality, attention to detail, and driving of Belmond brand standards throughout the operation.

Ensure that all food items are prepared as per standard recipe cards whilst maintaining portion control and minimising wastage.

Assist with the training of staff for them to direct their efforts toward exceptional and complete guest satisfaction, employee productivity, compliance to brand standards, and hotel profitability.

Ensure that food stock levels within the kitchen and pantry areas are of sufficient quantity and quality in relevance to the hotel’s occupancy and function forecasts.

Ensure that all food products received into the kitchen are of the required standard and quality and that they are stored and rotated correctly.

Assist in conducting development and performance reviews, identifying key personnel for further development and structured career pathing.

Comply with and enforce sanitation regulations and safety standards.

Requirements

Four years of Experience as a Sous Chef for a premier luxury hotel or resort.

A 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major.

Detail oriented yet able to excel while multi-tasking.

Excellent communication and interpersonal skills.
